Year of Gratitude - Day 333 - Ombré Potato and Root Vegetable Gratin

I began making this Food & Wine recipe without paying attention to how long it was going to take... 3 HOURS. Half of that is cook time, but that just meant the other half was prep time.Ugh. It was not fun cleaning, peeling and cutting up all those hearty root veggies. I realized as I cut my first veggies, the beets, that this was going to a be a laborious process. And it was, but DANG was it delicious!!!

I'm glad I sort of stumbled into making something new and a little more involved. I'm happy to say this recipe is something I would endure again - probably at Christmas!
